Happy Friday! I know Ya’ll are so excited to get done with work and enjoy your weekend. I have your weekend recipe for you to try as well. This one is great for anyone on one of our In8Life weight loss programs and trying to get a little more variety in their cooking. I know sometimes that we can get into a habit of what we like and that’s a great thing, but when we get bored it’s time to mix it up and try something new! I hope you all have an amazing weekend. Tomato Basil Chicken
Ingredients:
100 grams cubed chicken
1 cup chopped tomato
1/4 cup water or chicken broth
2 T. lemon juice
2 T. Balsamic vinegar
2 T. chopped red or green onion
1-2 garlic sliced
3 leaves basil rolled and sliced
1/8 tsp. oregano fresh or dried
1/4 tsp. garlic powder
1/4 tsp. onion powder
cayenne pepper to taste
salt and pepper to taste
Directions: Lightly brown the chicken in a small saucepan with lemon juice. Add garlic, onion, spices and water. After chicken is cooked add fresh tomatoes, basil, and balsamic vinegar. Continue cooking for 5-10 minutes. Salt and pepper to taste, garnish with fresh basil.
