What to do with those over ripe bananas?

Good Morning Everyone!

I don’t know about anyone else but I hate mushy, over ripe bananas.  Here’s a way to use them up. This is a rare occasion that I post a recipe but my husband has made a terrific quick and easy protein packed bar.  For those of you that don’t know, my husband Tim, is a wonderful baker.  The staff here at the office is his official “test kitchen” so to speak.  Dr. Muir has asked him to make a protein bar for a while now and finally he came up with one.   It is delicious, just ask Dr. Muir.

As I’m not a great recipe follower, bear with me.  These are the basic ingredients and then you can add in what ever else you’d like.

2-3 over ripe bananas

steel cut oats

scoop of protein powder

hemp seeds

Add ins: (you really are only limited to your taste buds)

cranberries or any dried fruit of your choice, chopped

almonds, walnuts really any nuts you choose, chopped

quinoa

carob chips/chocolate chips

coconut flakes

These are just examples. Your bake the mixture at 350 for about 15 minutes or so, you just need to adjust the time based on the consistency of the mixture.  That’s it!  Everyone loves them.  They are health.  What more could you ask for.  Try them and let us know what you think!

KISS Fact:   try freezing them for a total different take on the texture.  Either was they really good.
