Recipe Weekend!

Hey Guys,

I hope you guys had a great week and tried some new recipes! I had some last minute company over one night this week and quickly mixed up a one pan Mexican dish and broke out all the sides to make tacos. I was loving how simple and quick it was to make. I love to make elaborate meals that can be complex and add all the little details, but let’s be honest how often do any of us really have time for that? Being a working mom I’m all about that quick dinner so I can soak up some cuddles before we BOTH fall asleep. But I do love to cook and I love making new meals that my husband and I love. So today I wanted to post a meal that is pretty simple to make, but will still have that wow factor! I LOVE stuffed cabbage, but I never want to put in the work of stuffing and rolling and all that so this recipe is perfect! I think I am going to try some mashed cauliflower to sub for potatoes too! Can’t wait to try them this week!

Unstuffed Cabbage Roll

2 pounds ground beef

  1. 1 large onion, chopped

  2. 1 small head cabbage, chopped

  3. 2 (14.5 ounce) cans diced tomatoes

  4. 1 (8 ounce) can tomato sauce

  5. 1/2 cup water

  6. 2 cloves garlic, minced

  7. 2 teaspoons salt

  8. 1 teaspoon ground black pepper

Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add cabbage, tomatoes, tomato sauce, water, garlic, salt, and pepper and bring to a boil. Cover Dutch oven, reduce heat, and simmer until cabbage is tender, about 30 minutes.
