Quick and Easy…Just The Way I Like!

Hello Everyone

It was a rainy weekend so I spent some time in doors watch the Food Network and got some ideas for a nutritious dinner.  This recipe I made can be made for breakfast, lunch or dinner. It can be eaten on any In8Life program(just eliminate the bread) in any phase.  The point of this recipe is not as much about how to follow a recipe, it’s about thinking outside the box and getting inspiration from anywhere.  I love to watch HGTV or the Food Network, just to get ideas about new recipes or new projects for my hubby around the house.  I cook like my dad’s mom, my Bubba, she would just put things together.   Most of the time it was whatever she had on hand.  It always tasted good and I’m sure in her early days she made something that didn’t taste that great but she grew up in the depression and you ate it regardless.  Now a days we can just toss it out if it is truly inedible. As you all know, I’m not a recipe follower or truly a recipe reader.  This recipe doesn’t even really have a proper name so to speak, I’m going to try my best to explain what you need to do, so here goes.  The picture doesn’t really do justice to how terrific it tasted, my hubby Tim told me many times how much he enjoyed it.

1 small jar of roasted red peppers, sliced (two whole peppers were in the small jar)

mushrooms, sliced

minced garlic

olive oil

cherry tomatoes, sliced in half

1 large can crushed tomatoes

eggs ( one per person)

thick crusty bread grilled or toasted ( I used Ezekiel bread)

Directions:  sauté  the peppers, mushrooms, cherry tomatoes,  garlic and olive oil in skillet with deeper side (remember I recommend the Rachael Ray oval skillet, I use it for everything).  Once the veggies are cooked add in crushed tomatoes and simmer until reaches low boil.  Once at low boil crack in eggs into the mixture and cover to let egg cook (this is the same as making a poached egg in boiling water)  Once the egg white is cooked it done.  Toast you bread and lightly butter.  Place bread on the plate and spoon some of the sauce mix onto the bread (this is why it’s important to toast the bread so it doesn’t get mushy. Add the egg on top of the bread and sauce, Enjoy!

KISS fact: Get inspired to try different food, don’t be limited by what the recipe says.  If you don’t like roasted peppers, changed to green peppers.  If you don’t like mushrooms, change to onions.  Use any veggies that you want.  The worst thing that could happen is that it doesn’t taste good and you toss it, but you’ve learned what doesn’t work and change it up next time.  Never be afraid to try to cook  something new.  Remember sometimes you make a winner and sometimes you just learn what not to do again.  This is a life lesson…sometimes you win and sometimes you learn, you never loss if you’re learning something new!
