Eat More Avocados

Avocados are one of my favorite…fruits! Did you know they were a fruit?! Well if you didn’t, then here are some more cool facts as to why you should eat more avocados.

  1. They are a source of good healthy fats! Avocados are monounsaturated fats that are burned and used as energy when digested.

  2. They are high in potassium. Avocados actually contain double the amount of potassium as bananas do, and provide about 20 essential nutrients including vitamins E, B, and folic acid.

  3. They are a safe fruit to buy because of their thick skin. It protects against pesticides so you do not need to buy them organic.

Avocados are a SUPER FOOD and can become a part of so many easy to make meals! I will leave you guys with a couple of my favorite recipes.

Avocado Toast with Eggs

Ezekiel Bread toasted (you can find this in the freezer aisle)

Mashed up avocado- spread on top

Organic Eggs- anyway you like (scrambled or over easy are my favorites).

Salt and Pepper to taste

Avocado, Tomato, and Cucumber Salad

Cut up avocados, tomatoes, and cucumbers

mix together in a bowl

Add diced cilantro- I just mix in a little at a time for taste

Add fresh Lime juice- 1-2 limes

Salt and Pepper to taste
